Seafood Chowder

Dive into this creamy, comforting Seafood Chowder! Packed with fish, shrimp, and veggies, it's the perfect bowl to warm you up on any chilly day. 🦐🍲

Ingredients:
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 1 (14.5 oz) can corn kernels, drained
  • 3 cups chicken broth
  • 1 (8 oz) bottle clam juice
  • 1 ½ cups half-and-half
  • ½ cup heavy cream
  • 1 pound white fish fillets, cut into chunks
  • ½ pound shrimp, peeled and deveined
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
Directions:
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until tender, about 5 minutes.
  2. Add potatoes, corn, chicken broth, and clam juice to the pot. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until potatoes are tender.
  3. Stir in half-and-half, heavy cream, and thyme.
  4. Add fish and shrimp, cooking for about 5-7 minutes, or until the seafood is cooked through and flakes easily.
  5. Season with salt and pepper to taste. Serve hot, and enjoy!
