Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 1 (14.5 oz) can corn kernels, drained
- 3 cups chicken broth
- 1 (8 oz) bottle clam juice
- 1 ½ cups half-and-half
- ½ cup heavy cream
- 1 pound white fish fillets, cut into chunks
- ½ pound shrimp, peeled and deveined
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until tender, about 5 minutes.
- Add potatoes, corn, chicken broth, and clam juice to the pot. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until potatoes are tender.
- Stir in half-and-half, heavy cream, and thyme.
- Add fish and shrimp, cooking for about 5-7 minutes, or until the seafood is cooked through and flakes easily.
- Season with salt and pepper to taste. Serve hot, and enjoy!
