Sesame Instant Ramen Noodles with Broccoli & Soft-Boiled Egg

With a few simple additions—like broccoli, sesame oil, and a soft-boiled egg—you can put a healthy twist on instant noodles and turn this pantry staple into a warm and satisfying meal in under 10 minutes.

Ingredients:
  • 3 cups water
  • 1 cup frozen broccoli
  • 1 (3 oz) package instant noodle soup (such as ramen)
  • 1 tsp toasted sesame oil
  • ½ tsp toasted sesame seeds
  • 1 large soft-boiled egg, halved (see tip below)
Directions:
  1. In a medium saucepan, bring 3 cups of water to a boil.
  2. Add broccoli and cook for 2 minutes.
  3. Add noodles (set aside the seasoning packet), and cook for 3 more minutes or until noodles are tender.
  4. Drain the broccoli and noodles and return to the pan.
  5. Stir in sesame oil, sesame seeds, and half of the seasoning packet (you can discard the rest or save it for another dish).
  6. Transfer to a bowl and top with the soft-boiled egg halves. Serve warm and enjoy!
Tips:
Soft-Boiling Eggs: Place an egg in a small saucepan and cover with water. Bring to a gentle simmer, then turn off the heat and let it sit for 2–3 minutes. Cool slightly before peeling for soft, jammy yolks.
Watch the Sodium: Most instant noodles come with a full seasoning packet, but using only half still gives plenty of flavor while helping reduce salt intake.
