- 4 Tbsp. unsalted butter
- 1/4 cup all-purpose flour
- 1 small yellow onion, chopped
- 1 medium green bell pepper, chopped
- 2 celery stalks, finely sliced
- 12 oz. andouille sausage, sliced into 1/2" rounds
- 2 cloves garlic, minced
- 1 Tbsp. salt-free Cajun seasoning
- Kosher salt & freshly ground black pepper, to taste
- 4 cups low-sodium chicken broth
- 1 (15-oz.) can fire-roasted diced tomatoes
- 1 bay leaf
- 1 lb. medium shrimp, peeled and deveined
- 3 scallions, sliced (reserve some for garnish)
- Cooked white rice, for serving
- Make the Roux:
In a large, deep skillet over medium-low heat, melt the butter, then whisk in the flour. Cook, stirring constantly, until the roux turns a deep caramel color, about 12-15 minutes. - Build the Flavor:
Add the onion, bell pepper, and celery. Sauté until softened, about 8 minutes. Stir in the sausage, garlic, and Cajun seasoning. Season with salt and pepper. Pour in the broth, tomatoes, and bay leaf. Bring to a boil, then reduce heat and let simmer, stirring occasionally, until thickened, about 1 hour. - Add the Shrimp:
In the last 6 minutes of cooking, stir in the shrimp. Let them cook until pink and opaque. Taste and adjust seasoning as needed. Stir in scallions, reserving some for garnish. - Serve & Enjoy:
Spoon cooked rice into bowls and ladle the gumbo over the top. Garnish with the reserved scallions and serve hot.
