A rich, seafood-inspired cheesecake baked in puff pastry, topped with shrimp and chives for a decadent appetizer.

Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 6 tsp minced garlic
- 1 lb fresh shrimp, peeled and deveined
- 12 puff pastry shells, baked
- 4 tbsp butter
- 3 (8 oz) packages cream cheese, softened
- 4 eggs
- ½ cup heavy cream
- 16 oz smoked Gouda, grated
- 2 tsp salt
- Preheat oven to 350°F (175°C).
- Heat olive oil in a skillet over medium-low heat and sauté onion and garlic until translucent. Let cool and drain excess liquid.
- Chop shrimp into ½-inch pieces, reserving 12 whole shrimp for garnish. Melt butter in the same skillet and cook chopped shrimp with garlic for 2-4 minutes.
- Remove the center from each puff pastry shell.
- In a bowl, beat cream cheese until smooth, then mix in eggs, heavy cream, Gouda, onions, shrimp, and salt.
- Spoon the mixture into the pastry shells.
- Bake for 20-25 minutes until the filling is golden.
- Garnish with whole shrimp and chopped chives. Serve warm.
