Simple Poached Egg and Avocado Toast

Ingredients:
- 2 eggs
- 2 slices whole grain bread
- 1/3 avocado
- 2 tablespoons shaved Parmesan cheese
- salt and pepper for topping
- fresh herbs (parsley, thyme, or basil) for topping
- quartered heirloom tomatoes for serving
- Bring a pot of water to a boil, ensuring there's enough water to fully cover the eggs when they’re placed in the bottom. Place the metal rims (outer part) of two mason jar lids flat in the pot, then turn off the heat once the water is boiling. Carefully crack the eggs into the rims, cover the pot, and poach for about 5 minutes (4 for very soft, 4:30 for soft, or 5+ for semi-soft yolks).
- While the eggs cook, toast the bread and spread mashed avocado on each slice. Once the eggs are done, use a spatula to lift them out of the water. Gently remove the rims and place the poached eggs on top of the toast. Sprinkle with Parmesan, salt, pepper, and fresh herbs, and serve with quartered heirloom tomatoes.
