This skillet spinach lasagna recipe is a quick and easy way to make lasagna without the hassle of layering or baking. Perfect for busy weeknights!
Ingredients:
Ingredients:
- 1 pound bulk Italian sausage
- 8 lasagna noodles, broken into pieces
- 1 (28-ounce) can crushed tomatoes
- 1 (8-ounce) can tomato sauce
- 2 cups torn fresh spinach
- ½ cup ricotta cheese
- 4 ounces fresh mozzarella cheese, sliced
- ¼ cup grated Parmesan cheese
- Cook the Sausage: Heat a large skillet over medium-high heat. Add sausage and cook, stirring and breaking it into smaller pieces, until it is browned and crumbly (about 5 to 7 minutes).
- Add the Noodles: Stir in the broken lasagna noodles, ensuring they are evenly distributed.
- Simmer the Sauce: Pour in the crushed tomatoes and tomato sauce over the sausage-noodle mixture. Bring to a boil, then reduce heat to low. Cover the skillet and let it simmer for about 25 minutes, stirring occasionally, until the noodles are cooked and the sauce thickens.
- Incorporate the Cheese & Spinach: Add the torn spinach, ricotta, and mozzarella. Stir gently to combine.
- Let it Rest: Cover the skillet, remove from heat, and let the lasagna stand for 5 minutes to allow flavors to meld.
- Finish & Serve: Sprinkle with grated Parmesan cheese before serving. Enjoy!
