Skillet Spinach Lasagna

This skillet spinach lasagna recipe is a quick and easy way to make lasagna without the hassle of layering or baking. Perfect for busy weeknights!

Ingredients:
  • 1 pound bulk Italian sausage
  • 8 lasagna noodles, broken into pieces
  • 1 (28-ounce) can crushed tomatoes
  • 1 (8-ounce) can tomato sauce
  • 2 cups torn fresh spinach
  • ½ cup ricotta cheese
  • 4 ounces fresh mozzarella cheese, sliced
  • ¼ cup grated Parmesan cheese
Directions:
  1. Cook the Sausage: Heat a large skillet over medium-high heat. Add sausage and cook, stirring and breaking it into smaller pieces, until it is browned and crumbly (about 5 to 7 minutes).
  2. Add the Noodles: Stir in the broken lasagna noodles, ensuring they are evenly distributed.
  3. Simmer the Sauce: Pour in the crushed tomatoes and tomato sauce over the sausage-noodle mixture. Bring to a boil, then reduce heat to low. Cover the skillet and let it simmer for about 25 minutes, stirring occasionally, until the noodles are cooked and the sauce thickens.
  4. Incorporate the Cheese & Spinach: Add the torn spinach, ricotta, and mozzarella. Stir gently to combine.
  5. Let it Rest: Cover the skillet, remove from heat, and let the lasagna stand for 5 minutes to allow flavors to meld.
  6. Finish & Serve: Sprinkle with grated Parmesan cheese before serving. Enjoy!
