Ingredients:
  • 1 (16-ounce) jar salsa
  • 1.25-ounce packet dry taco seasoning
  • Juice of 1 medium lime
  • 3 tablespoons chopped fresh cilantro
  • 3 pounds skinless, boneless chicken thighs
Directions:
  1. Stir together salsa, taco seasoning, lime juice, and cilantro in a slow cooker until well combined.
  2. Add the chicken thighs, coating them with the mixture.
  3. Cover and cook: Low for 6–8 hours, or High for about 4 hours, until the chicken reaches 165°F in the center.
  4. Shred the chicken directly in the slow cooker using two forks, then stir to coat it in the sauce.
