- ½ cup buttermilk
- ½ cup water
- Salt and ground black pepper, to taste
- 1 pound catfish fillets, cut into strips
- 1½ cups fine cornmeal
- ½ cup all-purpose flour
- 1 teaspoon seafood seasoning (like Old Bay)
- Vegetable oil for deep frying
- In a shallow dish, combine buttermilk, water, salt, and pepper. Add the catfish strips and coat well.
- In a resealable plastic bag or large bowl, mix the cornmeal, flour, and seafood seasoning.
- Dredge each catfish strip in the dry mixture until fully coated.
- Heat oil in a deep fryer or heavy skillet to 365°F (185°C).
