Ingredients:
- 1/3 cup apricot preserves
- 1/4 cup chili sauce
- 1 tablespoon hot mustard
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 4 boneless, skinless chicken breast halves (4 ounces each)
Directions:
- Preheat the broiler. In a small saucepan, stir together the apricot preserves, chili sauce, mustard, salt, and pepper. Warm over medium heat until smooth and heated through.
- Place the chicken on a foil-lined or lightly greased baking pan. Broil 3–4 inches from the heat until the internal temperature reaches 165°F — about 6–8 minutes per side.
- Brush the chicken with the apricot glaze during the last 5 minutes of cooking for that irresistible sticky finish.
