Spicy Apricot-Glazed Chicken

Tired of making the same old chicken every week? This sweet-and-spicy glaze brings a little excitement back to dinner—no special occasion required.

Ingredients:
  • 1/3 cup apricot preserves
  • 1/4 cup chili sauce
  • 1 tablespoon hot mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 boneless, skinless chicken breast halves (4 ounces each)

Directions:
  1. Preheat the broiler. In a small saucepan, stir together the apricot preserves, chili sauce, mustard, salt, and pepper. Warm over medium heat until smooth and heated through.
  2. Place the chicken on a foil-lined or lightly greased baking pan. Broil 3–4 inches from the heat until the internal temperature reaches 165°F — about 6–8 minutes per side.
  3. Brush the chicken with the apricot glaze during the last 5 minutes of cooking for that irresistible sticky finish.

Tip: Try serving it with steamed green beans or a side of brown rice to soak up every drop of that sweet-spicy sauce.
