Spicy Peanut Soup with Sweet Potato & Kale

Ingredients:
  • 2 tablespoons olive oil
  • ½ onion, diced
  • 1 jalapeño, minced
  • 2 cloves garlic, minced
  • 3 large sweet potatoes, peeled and cubed
  • 1 (14-ounce) can fire-roasted tomatoes
  • 1 (14-ounce) can light coconut milk
  • 2 cups water
  • 1 teaspoon salt
  • 1 teaspoon curry powder or turmeric
  • ½ cup chopped peanuts
  • ¼ cup peanut butter
  • 1–2 cups kale, stems removed and chopped

Instructions:

  1. Heat olive oil in a large soup pot over medium heat. Add onion, garlic, and jalapeño, and sauté until soft and fragrant.
  2. Stir in the sweet potatoes and let them brown slightly with the aromatics for extra flavor.
  3. Add the tomatoes, coconut milk, water, salt, curry or turmeric, and chopped peanuts. Bring to a simmer and cook until the sweet potatoes are fork-tender.
  4. Stir in the peanut butter and kale, and let the soup simmer until it’s thick, creamy, and deeply flavorful.
  5. Ladle into bowls and top with extra peanuts—or a sprinkle of cilantro—for a bright, finishing touch.
