- 8 large fresh mushrooms, sliced
- 8 ounces spinach, rinsed and chopped
- 1 tablespoon crumbled feta cheese
- 4 (4 ounce) fillets flounder
- 2 tablespoons water
- Set the oven to 350°F (175°C) and lightly coat an 8-inch baking dish with nonstick spray.
- Heat a medium skillet over medium heat after spraying it with nonstick spray. Sauté the mushrooms, stirring occasionally, until their juices evaporate, about 5 minutes. Add the spinach and cook until wilted, about 2 minutes. Remove from heat, drain any excess liquid, and mix in the feta cheese.
- To prepare the fish rolls, place a quarter of the spinach mixture on the wide end of each fillet. Gently roll the fillet around the filling and secure it with wooden toothpicks. Arrange the rolls in the baking dish, seam side down, then add water and loosely cover with foil.
- Bake for 15 to 20 minutes or until the fish is fully cooked, turning opaque and flaking easily with a fork.
