- 5 Tbsp. soy sauce
- 1/4 cup hoisin sauce
- 1 Tbsp. chili-garlic sauce
- 1 Tbsp. grated fresh ginger
- 1 Tbsp. unseasoned rice vinegar
- 1 tsp. toasted sesame oil
- 1/2 cup chunky peanut butter
- 1 1/2 lb. flank steak
- 1 tsp. vegetable oil
- 2 oz. thin rice noodles
- 2 heads butter lettuce, leaves separated
- 1 1/2 cups matchstick-cut carrots
- 1 English cucumber, sliced into matchsticks
- 1/2 cup fresh mint leaves
- Make the Sauce: In a large bowl, mix soy sauce, hoisin, chili-garlic sauce, ginger, vinegar, and sesame oil. Take out ¼ cup and stir in peanut butter and hot water in a separate bowl. Cover and set aside for later.
- Marinate the Steak: Place steak in a shallow dish and pour the remaining marinade over it, turning to coat evenly. Cover and chill for 30 minutes to 2 hours.
- Grill the Steak: Lightly oil a grill or grill pan and heat over medium-high. Pat the steak dry, then grill 4–6 minutes per side for medium-rare (135°F internal temp).
- Assemble & Serve: Let steak rest 5 minutes before slicing against the grain. Cook rice noodles as directed. Fill lettuce leaves with noodles, steak, carrots, cucumber, and mint. Drizzle with peanut sauce and serve extra on the side.
