Stuffed Sweet Potato with Hummus Dressing

Ingredients (serves 1):
  • 1 sweet potato, pricked with a fork
  • 1 handful kale (washed, with water clinging to leaves)
  • ½ cup black beans
  • Hummus + water (to make a pourable dressing)
Directions:
  1. Microwave the pricked sweet potato on High until soft, about 7–10 minutes.
  2. Meanwhile, in a saucepan, wilt the kale (with its residual water), then add the black beans and cook briefly until heated through.
  3. Split open the cooked sweet potato and top with the kale-and-bean mix. Whisk hummus with 2 Tbsp water (add more if needed for pourability) and drizzle over the top.
