Ingredients:
- 3 medium zucchini
- 1 pound pork sausage
- 1 cup dry bread crumbs
- ½ cup grated Parmesan cheese
- 1 garlic clove, minced
- 1 (32 oz) jar of spaghetti sauce
- ½ cup shredded mozzarella cheese
- Preheat your oven to 350°F. Gather everything you need—this one comes together fast.
- Prep the zucchini: Trim off the stems and slice each zucchini lengthwise. Use a spoon to scoop out the seeds and place them in a mixing bowl.
- Make the filling: To the bowl of zucchini seeds, add the sausage, bread crumbs, Parmesan, and garlic. Mix it all together until well combined.
- Stuff the zucchini: Spoon the sausage mixture into the hollowed-out zucchini halves and place them in a 9x13-inch baking dish.
- Add sauce & bake: Pour the spaghetti sauce over the stuffed zucchini, cover the pan with foil, and bake for 45 minutes.
- Add the cheese: Remove the foil, sprinkle mozzarella over the top, and bake for another 15 minutes—until melted and lightly golden.
- Let cool slightly and serve warm. Perfect with a small green salad or crusty bread.
