Sweet and Sour Glazed Shrimp

A quick skillet dish that balances tangy sweetness with a savory bite—perfect for a weeknight surprise.

Ingredients:
  • 1/4 cup Chinese plum sauce
  • 1/4 cup ketchup
  • 2 teaspoons soy sauce
  • 1/4 teaspoon crushed red pepper flakes
  • 1 1/4 pounds medium shrimp, peeled and deveined and tails removed
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon peanut oil
  • 2 scallions, thinly sliced (white and green parts kept separate)
  • 1 clove garlic, finely chopped
  • 1 teaspoon finely chopped peeled fresh ginger
  • 3 tablespoons unseasoned rice wine vinegar
  • Cooked white rice, for serving, optional
Method:
  1. In a small bowl, combine the plum sauce, ketchup, soy sauce, and pepper flakes. Set this sauce aside.
  2. Season the shrimp with salt and pepper. In a medium skillet, heat the oil over medium-high heat. Cook the shrimp for 2-3 minutes, stirring occasionally, until just done. Remove them from the skillet and place them on a plate.
  3. To the same skillet, add the white parts of the scallions, garlic, and ginger. Cook for about 1 minute, stirring constantly, until they have softened. Pour in the vinegar, using it to scrape the browned bits from the bottom of the pan.
  4. Add the reserved sauce and bring it to a simmer. Return the cooked shrimp to the skillet, add the green scallions, and swirl everything to combine. Serve immediately over white rice, if desired.
