Sweet Potato & Brussels Sprouts Hash with Chicken Sausage

This simple yet flavorful Sweet Potato & Brussels Sprouts Hash with Chicken Sausage is a perfect dish for busy days, combining the sweetness of roasted potatoes, the richness of savory sausage, and the crisp bite of Brussels sprouts—all in one easy, satisfying skillet! Ingredients:

2 cups cubed, peeled sweet potatoes
2 apple-flavored pre-cooked chicken sausages
3 teaspoons olive oil, divided
10 oz bag of shaved Brussels sprouts

Directions:

  1. Place sweet potatoes in a microwave-safe dish with ¼ inch of water. Cover with plastic wrap and microwave on High for about 3 minutes, or until fork-tender. Drain.
  2. Dice the sausages. Heat 1 teaspoon of oil in a large nonstick skillet over medium heat. Add the sausage and cook, stirring, until heated through and golden brown, about 3 minutes. Remove from the skillet and set aside.
  3. In the same skillet, heat the remaining 2 teaspoons of oil over medium heat. Add the Brussels sprouts and cook, stirring, for about 3 minutes. Add the sweet potatoes and sausage to the pan, stirring to combine. Season with salt and pepper to taste.
Make Ahead:
Refrigerate for up to 1 day.
