Ingredients:

Directions:
- Place sweet potatoes in a microwave-safe dish with ¼ inch of water. Cover with plastic wrap and microwave on High for about 3 minutes, or until fork-tender. Drain.
- Dice the sausages. Heat 1 teaspoon of oil in a large nonstick skillet over medium heat. Add the sausage and cook, stirring, until heated through and golden brown, about 3 minutes. Remove from the skillet and set aside.
- In the same skillet, heat the remaining 2 teaspoons of oil over medium heat. Add the Brussels sprouts and cook, stirring, for about 3 minutes. Add the sweet potatoes and sausage to the pan, stirring to combine. Season with salt and pepper to taste.
Refrigerate for up to 1 day.
