Instructions:
- Preheat your oven to 375°F and spray a mini muffin tin with cooking spray. Pierce each sweet potato 3 to 4 times with a fork. Place the potatoes on a microwave-safe plate and microwave for 15 minutes. If they’re not fork-tender after 15 minutes, continue microwaving in 30-second increments until they are.
- Once the potatoes are cooked through, scoop the filling into a large bowl and discard the skins. Using a potato masher or fork, mash the sweet potatoes until smooth. Stir in the brown sugar, heavy cream, cinnamon, vanilla, and salt until well combined.
- On a lightly floured surface, roll out the crescent dough and pinch the seams together. Cut the dough into 24 squares and place each square into the cups of the muffin tin.
- Spoon a generous tablespoon of the sweet potato mixture into each crescent square, then top with mini marshmallows. Bake until the crescent pastry is golden brown, about 12-15 minutes. After that, place a pecan in the center of each bite and bake for an additional 5 minutes. If desired, brush the pecans with maple syrup before serving.
