Ingredients:
- 2 cups unsweetened pineapple juice
- 1 cup ketchup
- 1 cup soy sauce
- 2 tablespoons minced fresh gingerroot
- 2 tablespoons packed brown sugar
- 1 tablespoon coarsely ground pepper
- 8 garlic cloves, minced
- 4 pounds boneless skinless chicken breasts
- 4 slices fresh pineapple, 1/2-inch thick, cores removed
- 2 tablespoons olive oil
- Thinly sliced green onions, optional
- Marinate the Chicken
Combine pineapple juice, ketchup, soy sauce, ginger, brown sugar, pepper, and garlic in a bowl. Pour half over chicken in a dish, turning to coat. Refrigerate overnight (save remaining marinade). - Grill the Chicken
Drain and discard used marinade. Grill chicken on oiled grates over medium-high heat, covered, 6-7 minutes per side (until 170°F). - Char the Pineapple
Grill pineapple slices, flipping often, until lightly charred (5-7 minutes). Chop. - Finish & Serve
Simmer reserved marinade in a grill-side saucepan for 10 minutes until thickened. Top chicken with pineapple, drizzle with sauce, and garnish with green onions.
