The Denver Omelet

This dish will give your breakfast a protein-packed punch with a combo of fluffy eggs, sweet peppers, smoky ham, and melty cheese.

Ingredients:
  • 3 large eggs
  • 1 tablespoon milk
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon butter
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped green bell pepper
  • ¼ cup chopped cooked ham
  • ¼ cup shredded Cheddar cheese
Directions:
  • In a bowl, whisk together the eggs, milk, salt, and pepper.
  • Melt butter in a nonstick skillet over medium heat.
  • Add onion and green bell pepper, and cook until softened, about 5 minutes.
  • Stir in the ham and cook for another 2 minutes.
  • Pour in the egg mixture and let cook until the edges begin to set.
  • Gently lift edges with a spatula to allow uncooked egg to flow underneath.
  • When the omelet is mostly set, sprinkle cheese over one half.
  • Fold the omelet in half and cook until the cheese melts.
  • Slide onto a plate and serve hot.
