Tofu Fried Rice

Here’s a fun twist on comfort food: a fried rice that looks familiar at first, then surprises you with warm spices, little crunchy bits, and a touch of sweetness from raisins. It’s quick, cozy, and a great way to turn leftover rice into something everyone will rave about.

Tip before you start: Let your leftover rice come to room temperature, and break up clumps with your hands, not in the skillet. This helps the grains crisp beautifully instead of steaming.

Ingredients:
  • 1 (14-oz.) package firm tofu, drained
  • ¼ cup plus 2 Tbsp olive oil, divided
  • 2 Tbsp thinly sliced garlic (about 4 large cloves)
  • 1 Tbsp finely chopped fresh ginger
  • 1 Tbsp ground turmeric
  • ½ cup raisins, divided
  • 3 cups leftover cooked long-grain white rice (like basmati), clumps broken up
  • 1 cup chopped fresh cilantro
  • 1 Tbsp fresh lemon juice (from 1 lemon)
  • 1 ½ tsp kosher salt
  • Plain whole-milk or nondairy yogurt, for serving (optional)
Directions:
  1. Prep the tofu.
    Wrap the tofu in a clean kitchen towel and press gently to remove excess moisture—it’s completely fine if it breaks apart. Transfer to a medium bowl and crumble into small pieces.
  2. Build the flavor base.
    Heat ¼ cup olive oil in a large nonstick skillet over medium heat. Add the garlic, ginger, turmeric, and ¼ cup of the raisins. Cook, stirring often, until the garlic softens, about 2 minutes.
  3. Coat the tofu in spice.
    Add the crumbled tofu and cook, stirring constantly, until it soaks up the turmeric oil, about 30 seconds.
  4. Crisp the rice.
    Add the rice and remaining 2 Tbsp oil. Stir well to combine. Spread everything into an even layer and cook, undisturbed, for about 3 minutes until crisp in spots. Stir, press into another even layer, and cook again for 3 minutes to build more of those golden, crunchy bits.
  5. Finish and serve.
    Remove from heat. Stir in the cilantro, lemon juice, salt, and the remaining ¼ cup raisins. Add a drizzle of yogurt if you like a cool contrast.
