Ingredients:
- 1 (14-oz.) package firm tofu, drained
- ¼ cup plus 2 Tbsp olive oil, divided
- 2 Tbsp thinly sliced garlic (about 4 large cloves)
- 1 Tbsp finely chopped fresh ginger
- 1 Tbsp ground turmeric
- ½ cup raisins, divided
- 3 cups leftover cooked long-grain white rice (like basmati), clumps broken up
- 1 cup chopped fresh cilantro
- 1 Tbsp fresh lemon juice (from 1 lemon)
- 1 ½ tsp kosher salt
- Plain whole-milk or nondairy yogurt, for serving (optional)
- Prep the tofu.
Wrap the tofu in a clean kitchen towel and press gently to remove excess moisture—it’s completely fine if it breaks apart. Transfer to a medium bowl and crumble into small pieces. - Build the flavor base.
Heat ¼ cup olive oil in a large nonstick skillet over medium heat. Add the garlic, ginger, turmeric, and ¼ cup of the raisins. Cook, stirring often, until the garlic softens, about 2 minutes. - Coat the tofu in spice.
Add the crumbled tofu and cook, stirring constantly, until it soaks up the turmeric oil, about 30 seconds. - Crisp the rice.
Add the rice and remaining 2 Tbsp oil. Stir well to combine. Spread everything into an even layer and cook, undisturbed, for about 3 minutes until crisp in spots. Stir, press into another even layer, and cook again for 3 minutes to build more of those golden, crunchy bits. - Finish and serve.
Remove from heat. Stir in the cilantro, lemon juice, salt, and the remaining ¼ cup raisins. Add a drizzle of yogurt if you like a cool contrast.
