Ingredients:
- 2 tablespoons olive oil
- 1 small onion, diced
- 1 carrot, diced
- 1 celery stalk, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
- 1 (14.5-ounce) can diced tomatoes
- 4 cups vegetable or chicken broth
- ½ cup dry orzo pasta
- Optional garnishes: chopped parsley, a splash of cream, or coconut milk
- Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery; sauté until softened, about 5 minutes.
- Stir in garlic, smoked paprika, oregano, salt, and pepper; cook 1 minute until fragrant.
- Add diced tomatoes and broth, then bring to a boil.
- Stir in orzo, reduce heat, and simmer uncovered until the orzo is tender, around 8–10 minutes.
- Taste and adjust seasoning; if desired, stir in a splash of cream or coconut milk for richness.
