Tomato Tart

This simple, savory tart is perfect for lunch or a light dinner—an easy way to make use of fresh ingredients and create something delicious and healthy; it is packed with lycopene and Vitamin C!
Ingredients:
1 sheet frozen puff pastry, thawed
1 onion, thinly sliced
1 teaspoon olive oil
2-3 large tomatoes (different colors make a beautiful tart, but red works great too!)
1 cup of your favorite cheese (blue cheese, mozzarella, feta, or Parmesan are all delicious options)
1 tablespoon Italian seasoning, or fresh herbs like basil and oregano
Salt and pepper to taste (or salt substitute if you’re watching sodium)

- Preheat your oven to 425°F and line a baking sheet with parchment paper or nonstick aluminum foil.
- Roll out the puff pastry on the prepared baking sheet. Use a fork to poke small holes across the bottom to prevent puffing up too much.
- In a skillet over medium heat, sauté the onions in olive oil for about 5 minutes until they soften, stirring frequently.
- Spread the sautéed onions evenly over the puff pastry, then arrange the tomato slices on top, making sure they don’t overlap. Sprinkle with cheese and half of the herbs. Season with salt and pepper to your taste.
- Bake for 25 minutes or until the crust is golden brown. Once out of the oven, sprinkle with the remaining herbs. Cut into squares and enjoy!
