Tuna Salad Cucumber Cups

Ingredients:
  • 1 English cucumber (hothouse variety is sweeter!)
  • 4-5 oz canned tuna (drained)
  • 2 tbsp homemade or store-bought mayo (see notes below)
  • ⅛ tsp onion powder
  • ⅛ tsp garlic powder
  • Salt and pepper to taste
Tasty Garnish Ideas:

Paprika
Chopped chives or scallions
Sprouts
Microgreens
Baby arugula
Sliced cherry tomatoes

Instructions:
  1. In a bowl, combine the tuna with mayo (or substitute with Greek yogurt, mashed avocado, or hummus), plus any veggies you like. Add garlic powder, onion powder, salt, and pepper to taste. Feel free to use your favorite tuna salad recipe here!
  2. Slice the cucumber into discs and scoop out a bit of the center. Arrange them on a plate.
  3. Spoon the tuna salad into each cucumber cup and dig in! It’s that simple!
  4. For an extra touch, use a cheese slicer or vegetable peeler to create pretty ribbons of cucumber before slicing.
Notes:
  1. You can use chunk light or albacore tuna—just look for sustainable, wild-caught options if you can! Fresh cooked tuna or even salmon works great too.
  2. Add any of your favorite veggies to the tuna salad—carrots, pickles, avocado, peppers, radishes, or green onions all work wonderfully.
  3. Swap mayo for Greek yogurt, hummus, or mashed avocado. Want a bit of tang? Add a dash of yellow or Dijon mustard!
