Turmeric Lentil Soup

Sometimes the best meals come from what’s already in your kitchen. This hearty, plant-based lentil soup is simple, nourishing, and easy on the wallet—perfect for a chilly day when you want something filling without the fuss.

Ingredients:
  • 2 tablespoons oil
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • ½ teaspoon turmeric
  • 1 cup dried lentils
  • 2 cups vegetable broth or water
  • 2–3 cups spinach or other greens, finely chopped (optional)
  • ¼ teaspoon pepper
  • 1 teaspoon salt, or to taste
Instructions:
  1. Set your Instant Pot to sauté and let it warm for a few minutes.
  2. Add oil, then onions, and cook until tender.
  3. Stir in carrots, garlic, cumin, and turmeric; cook for about a minute to bring out the flavors.
  4. Add lentils, broth (or water), greens if using, pepper, and half the salt. Stir well.
  5. Add just enough water to cover the lentils by about an inch.
  6. Seal the Instant Pot and cook on Manual for 20 minutes.
  7. Once done, allow the pressure to release naturally.
  8. Stir, taste, and season with more salt if needed. Serve warm with salad or a slice of homemade bread.
