Ingredients:
- 2 tablespoons oil
- 2 carrots, sliced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon cumin
- ½ teaspoon turmeric
- 1 cup dried lentils
- 2 cups vegetable broth or water
- 2–3 cups spinach or other greens, finely chopped (optional)
- ¼ teaspoon pepper
- 1 teaspoon salt, or to taste
- Set your Instant Pot to sauté and let it warm for a few minutes.
- Add oil, then onions, and cook until tender.
- Stir in carrots, garlic, cumin, and turmeric; cook for about a minute to bring out the flavors.
- Add lentils, broth (or water), greens if using, pepper, and half the salt. Stir well.
- Add just enough water to cover the lentils by about an inch.
- Seal the Instant Pot and cook on Manual for 20 minutes.
- Once done, allow the pressure to release naturally.
- Stir, taste, and season with more salt if needed. Serve warm with salad or a slice of homemade bread.
