- 1 (14 ounce) package extra-firm tofu, drained and pressed
- 1 tablespoon olive oil
- ½ cup chopped onion
- 1 clove garlic, minced
- 1 cup chopped red bell pepper
- 1 cup chopped fresh mushrooms
- 1 cup chopped fresh spinach
- ½ teaspoon ground turmeric
- ¼ teaspoon ground cumin
- ¼ teaspoon chili powder
- Salt and ground black pepper to taste
- 1 cup cooked brown rice
- 1 (15 ounce) can black beans, rinsed and drained
- 1 avocado, sliced
- ¼ cup chopped fresh cilantro
- ½ cup salsa, or to taste
- Crumble tofu into small pieces with your hands or a fork.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic; sauté for 2–3 minutes.
- Add bell pepper and mushrooms; cook for 5–7 minutes until softened.
- Stir in crumbled tofu, spinach, turmeric, cumin, chili powder, salt, and pepper. Cook for another 5–7 minutes, stirring frequently, until heated through and fragrant.
- In serving bowls, layer brown rice and black beans.
- Top with the tofu scramble, avocado slices, cilantro, and salsa.
