Ultimate Tofu Breakfast Burrito Bowls

Here’s a savory breakfast that is not an egg! Packed with flavor and nutrition—plus, it's got a vegan option too.

Ingredients:
  • 1 (14 ounce) package extra-firm tofu, drained and pressed
  • 1 tablespoon olive oil
  • ½ cup chopped onion
  • 1 clove garlic, minced
  • 1 cup chopped red bell pepper
  • 1 cup chopped fresh mushrooms
  • 1 cup chopped fresh spinach
  • ½ teaspoon ground turmeric
  • ¼ teaspoon ground cumin
  • ¼ teaspoon chili powder
  • Salt and ground black pepper to taste
  • 1 cup cooked brown rice
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 avocado, sliced
  • ¼ cup chopped fresh cilantro
  • ½ cup salsa, or to taste
Directions:
  1. Crumble tofu into small pieces with your hands or a fork.
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic; sauté for 2–3 minutes.
  3. Add bell pepper and mushrooms; cook for 5–7 minutes until softened.
  4. Stir in crumbled tofu, spinach, turmeric, cumin, chili powder, salt, and pepper. Cook for another 5–7 minutes, stirring frequently, until heated through and fragrant.
  5. In serving bowls, layer brown rice and black beans.
  6. Top with the tofu scramble, avocado slices, cilantro, and salsa.
