Warm up with this hearty vegetable and lentil soup—a wholesome, one-pot wonder packed with vibrant veggies, tender lentils, and comforting flavors. Perfect for a cozy meal that’s as easy to make as it is delicious!
Ingredients:
1/3 cup dried red lentils
2 carrots, quartered lengthwise and diced
3 celery stalks, sliced
2 small leeks, sliced
2 tbsp tomato purée
1 tbsp fresh thyme leaves
3 large garlic cloves, chopped
1 tbsp vegetable bouillon powder
1 heaped tsp ground coriander
