Ingredients:

Ingredients:
- 1 pound dried navy beans (or 3–4 cans, drained and rinsed)
- 1 ham bone
- 2 cups leftover ham, chopped
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 stalks celery, chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- 2 teaspoons ground cumin
- 1 teaspoon oregano
- ½ teaspoon red pepper flakes
- 9 cups water
- Soak the dried beans overnight in water (3 inches above the beans). Drain and rinse before using.
- Heat olive oil in a large pot or Dutch oven. Sauté onions and celery until softened.
- Add ham bone, chopped ham, garlic, soaked beans, thyme, cumin, oregano, and red pepper flakes.
- Pour in 9 cups of water and bring to a boil. Reduce heat, cover, and simmer 60–90 minutes until beans are tender.
- Remove ham bone, shred any remaining meat into the soup, and stir. Add water if needed to thin the soup.
- Season to taste with salt and pepper. Serve warm.
