Quick and Easy Pancit

Ingredients:
  • 1 (12 ounce) package dried rice noodles
  • 1 teaspoon vegetable oil
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups diced cooked chicken breast meat
  • 1 small head cabbage, thinly sliced
  • 4 carrot, thinly sliced
  • ¼ cup soy sauce
  • 2 lemons - cut into wedges, for garnish
Method:
  1. Prepare the Ingredients
    Collect all of your ingredients before you begin.
  2. Soften the Noodles
    Place the rice noodles in a large bowl and cover them with warm water. Allow them to soften for 8 to 10 minutes, then drain the water and set the noodles aside.
  3. Sauté Aromatics and Chicken
    Heat oil in a wok or large skillet over medium-low heat. Add the onion and garlic, cooking and stirring until the onion is tender (about 3-5 minutes). Then, add the chicken, cabbage, carrots, and soy sauce, cooking until the cabbage starts to soften.
  4. Combine and Cook
    Add the drained noodles to the wok. Cook while stirring constantly until the entire dish is heated through.

I also wish I could print this recipe. My onl problem is that my husband is allergic to chicken and pork. What do I do to use beef in this recipe. How should the beef be handled and what cut of beef would be best used for the recipe? Thanks in advance for any advice to help me make a good meal. 😋

Best cut of beef:
Use something tender and quick-cooking like sirloin, flank steak, or ribeye. Slice it thinly against the grain so it stays tender.

How to prepare it:
  1. Slice the beef thinly (about ¼ inch).
  2. Season lightly with a bit of soy sauce and pepper (optional).
  3. Sear it first in a little oil over medium-high heat until just browned—about 2–3 minutes.
  4. Set it aside, then continue the recipe as written (sauté onions/garlic, add veggies, etc.).
  5. Add the beef back in right before adding the noodles so it stays tender and juicy.
It’ll give your pancit a rich, savory flavor without changing the recipe too much. ;)
