Ingredients:
  • 4 (8-ounce) boneless, skinless chicken breasts
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup thick jarred salsa verde (such as Casa Martinez)
  • 4 ounces pepper Jack cheese, shredded (about 1 cup)
  • Kosher salt, to taste
  • Chopped fresh cilantro, for garnish (optional)
Directions:
  1. Preheat oven to 425°F. Arrange a rack in the center of the oven.
  2. Season chicken evenly with black pepper. Place in a 12-inch ovenproof skillet or 3-quart baking dish. Drizzle with olive oil and pour salsa verde over the chicken.
  3. Bake until salsa is bubbly and a thermometer inserted into the thickest part of the chicken registers 140°F, about 20–25 minutes.
  4. Remove from oven and turn oven to broil. Sprinkle cheese over the chicken and return to oven. Broil until a thermometer registers 165°F and cheese is melted and browned in spots, about 4 minutes.
  5. Season with salt to taste and garnish with cilantro, if desired.
