- 1 tablespoon paprika
- 1 tablespoon cayenne pepper
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 tablespoon olive oil
- 4 (6 ounce) skinless salmon fillets
- 1 large mango, peeled and chopped
- 1 large avocado, chopped
- ¼ cup finely chopped red onion
- 1 tablespoon lime juice
- Salt and pepper to taste
- 8 small corn tortillas, warmed
- In a small bowl, combine all the dry spices for the salmon.
- Rub both sides of each fillet generously with the spice mix.
- Heat olive oil in a large skillet over medium-high heat.
- Add salmon fillets and cook 3 to 4 minutes per side, or until blackened and cooked through. Remove from heat and break into chunks.
- In a separate bowl, gently combine mango, avocado, red onion, and lime juice. Season to taste with salt and pepper.
- Warm tortillas and fill each with chunks of salmon and a generous spoonful of salsa.
- Serve immediately and enjoy the mix of spicy, sweet, and creamy textures.
