Ingredients:

Butter-flavored cooking spray
2 cups 2% milk
1 cup heavy whipping cream
3 large eggs
¾ cup white sugar
1 teaspoon vanilla extract
1 vanilla bean, halved lengthwise
4 large day-old chocolate croissants, cut into ½-inch thick pieces
1 (6-ounce) bag chocolate chips
1 tablespoon confectioners' sugar (or to taste)

Directions:

  1. Preheat your oven to 350°F (175°C). Lightly spray muffin cups or a brownie pan with cooking spray.
  2. In a mixing bowl, whisk together the milk, heavy cream, eggs, sugar, and vanilla extract. Using a knife, scrape the seeds from the vanilla bean halves into the milk mixture. Stir until smooth and light yellow in color.
  3. Gently fold the croissant pieces into the milk mixture, making sure all pieces are coated. Let it soak for at least 10 minutes.
  4. Stir in the chocolate chips. Spoon the croissant mixture into the prepared muffin cups or pan.
  5. Bake in the preheated oven for 35 to 45 minutes, or until the pudding is bubbly and golden brown.
  6. Let the pudding cool for 30 minutes to 1 hour, then transfer to a plate and dust with confectioners' sugar before serving.

Notes:
  • You can use a brownie pan with square sections, which works great for this recipe.
  • If you’re using a 9-inch square pan, check the pudding after 35 minutes to ensure it’s cooked through.
  • You can try soaking the croissant pieces for 30 minutes, but soaking for at least 10 minutes will work as well.
  • For an even richer result, you can cover and refrigerate the mixture overnight before baking.
