My first choice is over easy or poach. Then hard or soft boiled needs black pepper on it. If I am eating at a diner or anywhere it has to be scrambled.
 
I like eggs any way you wanna serve them! Scrambled with Chorizo and Queso Fresco, Poached and served with butter over Grits, Coddled, Basted, Over Easy, Sunny Side up, Boiled, Egg Salad, but my most fave is Sakshika---a simmered tomato base with eggs simmered on top..........sooooo yummy and easy to make!
Ohhh I know of it as shakshuka—and I agree, it's yummy and easy to make! I also like putting sunny side up over oatmeal and dousing it with sriracha! Have you tried it, @sadieclayladie?
