Not many people do it these days, but canning used to be a common practice. It was a practical method to preserve summer harvests for the colder months. I’ve been canning for years. I started when we had wild blackberries growing in our yard and there were too many to eat. I was so successful I won a blue ribbon at our county fair. I think I’ve just about canned everything out there, including sauces and soups.

That’s wonderful! It must feel so rewarding to see your hard work pay off, especially with that blue ribbon win. I bet your sauces and soups are full of flavor—there’s something special about homemade, isn’t there?

It is! One problem I’ve had is as a former chef, I have trouble cooking small batches. When I make soup, I reach for my big pots and then I end up with too much to freeze. One more point-there is a reason Campbells doesn’t sell soup in clear jars. It doesnt always look that great! Taste great, just doesn’t look great in jars.
 
Those big pots must be too tempting to resist! And you're right about the appearance—sometimes the taste is what really counts, even if it doesn’t look perfect in jars!
