Compounds like capsaicin in chili peppers trigger the same nerve receptors (TRPV1) that detect heat and physical irritation, tricking your brain into thinking your mouth is on fire. That burning feeling? Technically, your body reacts to pain, not flavor. So, next time you reach for hot sauce, just remember: you're voluntarily setting off a mini fire alarm in your mouth!
