- 1 package (11.3 oz) pecan shortbread cookies, crushed (about 2 cups)
- 1/3 cup butter, melted
- 4 cups heavy whipping cream
- 1/4 cup confectioners’ sugar
- 1 teaspoon coconut extract
- 1 package (8 oz) cream cheese, softened
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup Key lime juice
- 1/4 cup sweetened shredded coconut, toasted
- Sliced Key limes, optional (for garnish)
- In a small bowl, mix the crushed cookies with melted butter and press into the bottom and sides of a greased 9-inch deep-dish pie plate.
- In a large bowl, whip the cream until it starts to thicken. Add confectioners' sugar and coconut extract, then beat until stiff peaks form.
- In a separate bowl, beat the cream cheese, sweetened condensed milk, and Key lime juice until smooth and blended.
- Gently fold in 2 cups of the whipped cream, then spoon the mixture into the prepared crust.
- Top with the remaining whipped cream and sprinkle with toasted coconut.
- Refrigerate for at least 4 hours. Garnish with sliced Key limes before serving, if you’d like.
