No-Bake Key Lime Cream Pie

Ingredients:
  • 1 package (11.3 oz) pecan shortbread cookies, crushed (about 2 cups)
  • 1/3 cup butter, melted
  • 4 cups heavy whipping cream
  • 1/4 cup confectioners’ sugar
  • 1 teaspoon coconut extract
  • 1 package (8 oz) cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup Key lime juice
  • 1/4 cup sweetened shredded coconut, toasted
  • Sliced Key limes, optional (for garnish)
Directions:
  1. In a small bowl, mix the crushed cookies with melted butter and press into the bottom and sides of a greased 9-inch deep-dish pie plate.
  2. In a large bowl, whip the cream until it starts to thicken. Add confectioners' sugar and coconut extract, then beat until stiff peaks form.
  3. In a separate bowl, beat the cream cheese, sweetened condensed milk, and Key lime juice until smooth and blended.
  4. Gently fold in 2 cups of the whipped cream, then spoon the mixture into the prepared crust.
  5. Top with the remaining whipped cream and sprinkle with toasted coconut.
  6. Refrigerate for at least 4 hours. Garnish with sliced Key limes before serving, if you’d like.
